I love to cook, though I don't always have the energy to pull it off. Fibro, on even a good day, can leave you feeling just plain worn out constantly. When I am having a good day, I tend to make big batches of food to last for a couple days worth of meals.
When I do, I also make a plate for our neighbor across the way. Skye calls her Auntie Nell. She has attitude and spunk and watches out for us here so we do the same for her.
On this particular evening, Nell was the cook and she brought me over a nice big plate of tacos with rice and beans and the works. I was in heaven.
It is no surprise to anyone who has seen any of my videos that I am a white girl. That was not a racist statement. I cook like a white girl, but man does Nell love my tacos. She gets excited when I make them. Let me tell you, her tacos were amazing.
It has been a while since I had an authentic taco. Growing up in Chicago, there was a small place my parents would order from. I couldn't spell the name of the restaurant to save my life and since its been roughly 30 years since I have lived in that area now, I am not even sure it is still there. This plate of food brought me back to my childhood. It was amazing.
